Chef Servantes starts his day early, arriving at the restaurant around 1:30 AM to begin preparation. Prime brisket remains the signature item, but guests also enjoy pork ribs that fall off the bone, along with other favorites like turkey, cinco sausage, chicken drumsticks, beef cheek pastrami, and brisket tacos.
